The Social Grill has been a fixture of downtown Birmingham, Alabama since, well since forever. This recipe was clipped from a Birmingham newspaper years ago.

Social Grill’s Vegetable Casserole

16 oz. mixed vegetables
1 cup sour cream
1 can cream of mushroom soup
1 stick butter
1 8 oz. bag of stuffing mix OR 1 or 2 sleeves of Ritz Crackers
1 white onion, chopped

Cook onion with mixed vegetables. Drain vegetables. Add butter, sour cream and soup.

Line a casserole dish with 1/2 of the stuffing mix.(Or see variation below,) Add the vegetable mixture. Top the vegetables with the remaining stuffing mix.

Bake at 350° until the top turns brown.

Note: The mixed vegetables should include green beans, corn, peas, carrots. Or you may substitute fresh vegetables. If thicker crust is desired, use a 16 oz. bag.

As a variation to the recipe above, use a Ritz Cracker crumb topping, one or two sleeves, instead of the stuffing mix. I put the crushed crackers on top only. Pour the melted butter on top of the cracker crumbs and bake.

Decadent Candied Yams Recipe

Decadent Candied Yams – Great for Christmas and Thanksgiving feasts.

Wash and trim 5 medium sweet potatoes. Boil in salted water about 20 minutes. Peel and slice crosswise in baking dish. Slice about 1/2 inch thick.

Make a syrup (almost candy) of 2 cups sugar, 1 cup water and 1/2 cup butter and pour over sweet potatoes.

Bake in oven until syrup is bubbly and potatoes are browned slightly around edges.

If that’s not sweet enough for ya, top with marshmallows. I shudder in bliss thinking of all that sugar!
